Cooking With Kids Dispatch: Tuiles Aux Amandes

Tuiles are an elegant and fabulous French dessert that tickled everyone’s fancy at Agassiz Baldwin Afterschool. Our kid-cooks were very intense while baking this Tuiles aux amades copyright Shoko 2010recipe; they didn’t want to leave when parents showed up!

Since secrets stay in the kitchen, no one needs to know that, due to a typing error, the melted butter never made it into the first batch of Tuiles, causing lumpy flour and inadequate fat in the batter. Also, taking the Tuiles off the cookie sheet was a challenge, but the students came to the rescue making changes in the second batter that improved the basic recipe (e.g., adding the vanilla to the melted butter before adding to the dry ingredients, and sifting the flour.)

Once baked, we garnished the Tuiles with fresh strawberries, raspberries, homemade whipped cream, and homemade chocolate sauce drizzled on the side and on top of the fruit. This dessert was the true highlight of the year.
